Healthy Popcorn Chicken

Popcorn chicken at KFC is not a healthy snack although it’s one of our favorites. We were wondering how we could make it healthy and tasty. We tried and tried over again, till we finally found a way to make it in the oven instead of frying. This recipe is easy and you only need cornflakes, whole wheat flour, spices, and eggs. 

You will need 

  • 500-gram boneless chicken breasts
  • 2 tablespoons whole wheat flour
  • 1 cup cornflakes
  • 1 teaspoon garlic powder 
  • 1 teaspoon paprika powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil
  • 2 eggs


  1. Preheat oven; 200° celsius. Line a baking sheet with parchment paper and set aside. 
  2. Cut the chicken breasts into pieces.
  3. In a bowl, combine the whole wheat flour, garlic powder, paprika powder, black pepper, cayenne pepper, olive oil, and salt. Mix well.
  4. Beat the eggs and add them into the bowl and whisk well. 
  5. Add the chicken and mix well.
  6. In a separate bowl, add the cornflakes and crush them into little pieces. 
  7. Dip the chicken in the cornflakes until fully coated and put them on the baking sheet. Repeat the same step untill all the chicken pieces are coated. 
  8. Bake for 25-30 minutes. 

If you woul’d like you can experiment with different flour mixtures and adding in seasoning like onion powder. You could also experiment with using pork or turkey instead of chicken. You can do whatever you want with it.

    Yum thank you for the recipe. It doesn’t taste “healthy” at all
    I ate it with sweet potatoes fries (in the oven).
