Healthy Pumpkin Bread

Colder days, long walks, pumpkins, and hot chocolate,… it’s fall!!! 

The last couple of days, we challenged ourselves to make a healthier version of the classic pumpkin bread recipe. This delicious moist pumpkin bread is bursting with fall flavors in every bite. 

You will need

  • 1.5 cup oat flour
  • 1 cup oats 
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 eggs
  • ¼ teaspoon salt
  • 1 tablespoon pumpkin spice 
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • ¼ cup unsweetened applesauce
  •  ⅓ cup honey, maple syrup, or agave syrup
  • ¼ cup nuts (optional) 
  • ¼ cup pumpkin seeds (optional 


  1. Cut some pumpkin into cubes and boil it for about 10 minutes.
  2. Put the boiled pumpkin cubes into a blender and blend until smooth.
  3. Preheat oven; 180° celsius.
  4. Mix all the dry ingredients (the oat flour, oats, baking powder, baking soda, salt, and pumpkin spice) together in a bowl.  
  5. Crack the eggs into another bowl and whisk well. 
  6. Add the honey, applesauce, vanilla extract, and pumpkin puree into the bowl and whisk well. 
  7. Pour the mixture into the bowl with dry ingredients and stir till smooth.
  8.  Add the nuts into the mixture. 
  9. Pour the mixture into a cake pan and sprinkle some pumpkin seeds on top. 
  10. Bake for 60 minutes.
  11. Let the bread cool for 20 minutes before slicing. 

If you can’t find pumpkin spice at your supermarket you can make it yourself by combining 4 teaspoons ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground cloves, ½ teaspoon ground nutmeg.
