Tabbouleh is a Middle Eastern salad with a lot of parsley. We ate a lot of Tabbouleh during our trip in Jordan and make it at home since then. Its a super fresh salad perfect as a side dish. 

You will need 

  • 50-gram bulgur 
  • 1 bunch flat-leaf parsley – chopped
  • 50-gram mint – chopped
  • 1 large tomato – deseeded and diced 
  • 1 large cucumber – chopped
  • 3 spring onions – finely sliced 
  • Juice of 1 lemon 
  • 3 tablespoons of olive oil
  • 1 clove garlic – minced 

These ingredients are for 3 – 4 servings. 


Cook the bulgur, drain off when ready and set aside to cool. Put the diced tomato and cucumber in a bowl.Add the cool bulgur, chopped parsley, minced garlic and the chopped mint to the bowl. Pour the lemon juice and olive oil into the bowl and mix everything well. Season it with some salt to taste.

Let the salad rest for 15 minutes to let the flavors mingle and then serve. Enjoy!
